BANANA PUDDING

BANANA PUDDING
¾ CUP SUGAR, DIVIDED
1/3 CUP FLOUR
DASH SALT
3 EGGS SEPARTED
2 CUPS MILK
½ TSP VANILLA
45 NILLA WAFERS, DIVIDED
5 MEDIUM RIPE BANANAS ,SLICED
ABOUT [3-1/2 CUPS]
PREHEAT OVEN 350 DEGREES MIX ½ CUP OF THE SUGAR, FLOUR AND SALT IN TOP OF DOUBLE BOILER.BLEND IN 3 EGG YOLKS AND MILK. COOK UN COVERED OVER BOILING WATER 10 TO 12 MINUTES. OR UNTIL THICKENED,STIRING CONSTANTLY REMOVE FROM HEAT; STIR IN VANILLA.
SPREAD BOTTOM OF DISH AND AROUND SIDES WITH VANILLA WAFERS THEN SLICE BANANA’S ON TOP
OF WAFERS ABOUT 2 BANANA THEN PUT CUSTARD ON TOP OF BANANA AND THEN REPEAT WITH REMAINING LAYERS [ WAFERS ,BANANA,CUSTARD]
BEAT EGG WHITES WITH ELECTRIC MIXER UNTIL SOFT PEAKS GRADUALLY ADD ¼ CUP SUGAR
SPOON OVER CUSTARD BAKE 15 TO 20 MINUTES OR UNTIL LIGHTLY BROWN TOP WITH WAFERS
