Chicken stir fry
1 pound bonless , skinless chicken breast, cut in strips
Pam oliver oil spray
¼ teaspoon salt
½ teaspoon black pepper
1 pks.[16oz] frozen broccoli florets thawed
¾ cup chicken broth
1 tablespoon cornstarch
½ teaspoon garlic powder
3 cups hot cooked brown rice
Directions
Place chicken in medium bowl spray with cooking oil ; sprinkle with salt and pepper , toss lightly
Spray large skillet with cooking oil; heat over medium heat stir fry 5 minutes or until chicken strips
Are no longer pink in center add broccoli stir fry 3 minutes or heated through
Beat broth, cornstarch and garlic powder in medium bowl with wire whisk until well blended gradually add chicken mixture in skilled cook 4 minutes or until sauce is thickened stirring constantly stir in lemon juice serve over rice
